Apple & Carrot Muffins

Why not get a head start on lunchboxes AND provide the kids with an activity by getting them in the kitchen to cook up some delicious and nutritious apple and carrot muffins!

Ingredients:

2 small carrots, grated ~80g each

1 medium apple, grated ~160g

1 cup of low-fat greek yoghurt

1 cup whole meal self raising flour

1 tsp baking powder

2 tsp ground cinnamon

1 tsp vanilla essence

1/2 tsp ground nutmeg

1/2 tsp ground ginger

1 egg 12-hole muffin tin

Method:

  1. Pre heat oven to 180 degrees
  2. Mix all ingredients together
  3. Line muffin tin with patty pans or use a light spray of olive oil and spoon mixture evenly between each hole
  4. Bake for 20-30 minutes until golden brown and centre springs back when pressed
  5. Test that they are fully cooked by gently inserting a skewer into one of the muffins before removing from the oven
  6. Let the muffins cool for 2-3 minutes before getting out. Once out, put them on a wire rack to cool further and store any leftovers in the fridge
